Cold Sesame Noodle Salad w/ Tatsoi
This past week Katie and I recieved our first CSA pickup from Homestead Farms. Our loot was small given the wet spring that we have had, but it included: green and red lettuce; mustard greens; tatsoi; garlic scapes; basil; and strawberries.
Tonight we decided to make a cold sesame salad with the tatsoi. For those of you who do not know what tatsoi is (and I would count both of us in this category) Food Blogga says that, “Tat soi is a well loved Asian green that goes by many names including flat cabbage, rosette bok choy, and spoon cabbage. It’s a member of the brassica family which includes broccoli, Brussels sprouts, collards, and kale.” The recipe for the sesame noodles comes from Epicurious.com, and you can find it here. We only had a 1/2 package of soba noodles so we halved the recipe and used the tatsoi instead of the scallions and cucumber stripes. We also made a salad with the remainder of our lettuce, some red peppers (not CSA:() and red onions. This has been a great taste of what to expect from our CSA, and it feels really good to not only eat local but to eat such fresh and unique foods. Hopefully the rest of the year will yield some interesting and delicious recipes. We will keep you posted.
