Today Katie and I were fortunate enough to be able to share a sweet treat with Kristin from Will Travel For Vegan Food. For those of you who do not know who she is, or what she is doing, please check out her blog, her Facebook page, or her Kickstart page (until October 6th). In short, she and a friend will be traveling the country in a van to visit and document as many (possibly all) of the 100% vegan restaurants this country has to offer! You can read more details and follow her progress on her blog page, but I can say that after talking to her and hearing the enthusiasm and passion she has for this endeavor I do not doubt that she will be able to pull it off.
We intended to meet up at X’s To O’s Vegan Bakery in Troy, though this surprising outing almost didn’t happen. Kristin had just purchased the van that would chariot her on the upcoming travels, and it needed to be inspected and tuned up. Turns out it needed a bit more work than she thought, so it looked like we might have to postpone our meeting…but thankfully the van was done and we were able to sit down for a pre-dinner dessert.
Katie and I split a Grasshopper cupcake and a Cookies & Creme cupcake—both were delicious (the former had a ganache frosting that was decadent, to say the least). (For good measure we also bought a BBQ Jackfruit sandwich, some vegan mac & cheese, and a Black & White cookie. We had a great time talking about food (obviously), but also about about her history with being vegetarian and then vegan. It’s pretty cool to meet someone who you have followed on a blog, and in this case it was even cooler to meet someone who’s story you find to be so inspiring. As two vegetarians who are trying to emerge as two vegans, it was great be able to talk to someone who has walked that path for a while.
Thanks a lot to Kristin for taking time to meet up with us, and we wish her the best as she finishes up the preparations for her great vegan road trip (my words, not hers).
