A few delicious dishes

Thought that we would share some of the recent dishes that we have concocted, seeing as how we love to cook as much as we love to run.

The first meal was a really simple pasta dish with garlic, fresh tomatoes, basil, tofu ricotta, and a side of roasted eggplant. The second dish consisted of curried purple cauliflower, and wild rice stuffed butternut squash drizzled with maple syrup. The third meal was a really good improv dish that Katie thought up, consisting of: whole wheat pasta (two ways), roasted delicata squash and roasted pumpkin, garlicky swiss chard, with an apple cidery-pumpkiny-rosmary-sagey sauce. Finally we have our favorite soup: kale and potato soup with garlic, onions, diced tomatoes, and beans (great northern and kidney). This is a simple soup that tastes like it has been simmering all day, but in reality takes just a short time to prepare. Delicious for a chilly day!

All of these dishes made use of at least some of our CSA veggies. Anyone who has the chance to buy into a CSA should definitely take advantage of the opportunity to support local farmers and to get the freshest and most delicious produce you will ever have.
