Mexican Pizza with Refried Beans, Pico De Gallo, and Lime Cashew Cream

Who doesn’t love pizza? I mean, come on! But sometimes the traditional types of fixings grow a bit stale. Enter The Mexican Pizza. When we saw this recipe over at Vegan Richa (a truly beautiful blog) we just had to try it! It is super easy and super delicious.

Something different for you pizza arsenal. You gotta have a lot of choices when in comes to pizza. That way you will always be prepared when the hunger for pizza starts to attack.


  • 1 Pizza Dough (regular or whole wheat; whatever you want)
  • Can of Vegetarian Refried Beans (we were lazy and didn’t make these homemade; if you want to, check out Richa’s recipe)
  • any other add-ons: corn, guacamole, sliced avocados, whatever
  • 1 jalapeño (de-seeded and sliced)
  • Shredded lettuce.

Pico de Gallo

  • 1 small red onion (or 1/2 a medium one); diced
  • 2-4 tomatoes (de-seeded and diced)
  • juice of 1 lime
  • handfull of chopped cilantro
  • salt to taste

Lime Cashew Cream

  • juice of 1 lime
  • 1 C. of cashew cream
  • lime zest

The How To

  1. Heat oven to 425.
  2. Put all Pico de Gallo ingredients together in a bowl; set aside. (It is best to try and let this sit for a while, but its not necessary.)
  3. Put all Lime Crema ingredients into a blender…and, well, blend; set aside.
  4. Par bake dough until just starting to brown (about 10 minutes or so).
  5. Cover dough with refrained beans. Top with jalapeño. Bake for 20-25 minutes. Remove from oven.
  6. Top with Pico, lettuce, and any other of the add-ons; drizzle with Lime Crema.
  7. Scarf it down…maybe indulge with an adult libation or two.
