FREEZER MEAL EXTRAVAGANZA!
Part of our goal for the coming weeks before Nut gets here (assuming Nut sticks to the plan) is to make a bunch of freezer meals so that we don’t have to worry about lots of cooking. This mean lots of shopping ($200 worth) but if the outcome is less stress and a few extra moments together as a family then it will be well worth it.
There are lots of blog posts out there on making freezer meals, and there are lots of blog posts about doing things on the cheap. While we wanted to buy things as inexpensively as possible (re: Walmart) there was also the desire to make the prep as easy and simple as possible (re: just buying lots and lots of cans of beans). Maybe next time we will do things differently, but this is how we are rolling now.
We will be making things like Chickpea Noodle Soup, Tempeh Chili, Creamy Veggies with Wild Rice, Black Bean Enchiladas, Tempeh Stuffed Peppers, Coconut Curry with Veggies and Tofu, and Lentil Loaf. I’m sure there will be times when we do want to cook something fresh—where either we have the time or simply want to take a mental break and use cooking as a cathartic release—but for these moments when there is a need for simplicity and minimal effort, the freezer meals will be there to save the day.
We also made sure to buy lots of “staples” like pasta and peanut butter; cereal, oatmeal, and Maypo; pizza doughs (which we froze), and ingredients for trail mix. This certainly won’t be everything we need, and I’m sure that I’ll have to do more grocery runs once Nut gets here, but we want to have as many ‘stressors’ taken care of and put aside so that all our focus can be on sitting with, smooching on, snuggling and getting to know our little Nut.
